WEEKLY RECIPE
 
Caramel Apple Slush
Submitted by Rosemary (MN) HQ Resident Chef
Ingredients
Apple 'n Pear Slush Drink Mix
14 oz. (1 3/4 cups) spiced rum
Warm water (about 6 cups)
Warmed Creamy Caramel Sauce
Directions
Combine first 3 ingredients in the bucket; whisk until dissolved. Freeze 12-14 hours or overnight. Stir; spoon into glasses. Drizzle with warm Creamy Caramel Sauce for garnish. Makes 9 (8 oz.) servings

Crock pot Barbecue Chicken

Hello!  I am back home from a busy week in Milwaukee!  Little Mason is growing up so fast.  He is loosing the baby look a little bit and is beginning to look more like a toddler!  He is into EVERYTHING, so you have to watch him constantly.  He is crawling all over the place, and walks around furniture.  He just turned 11 months and I am sure he will be walking before his first birthday.  He kept Grammie, (and everyone else!) very busy!  Jenna also had me working on other projects.  I worked on designing pages for Mason's scrapbook, made him a birthday banner, four birthday cards that she needed for birthday parties they are attending, and I have 25 of these Elmo tags in process.  My Cricut got a real work out!  These will be attached to treat bags for the kids attending the party.

I also watched Mason one afternoon so Jenna and Diana could go shopping for some birthday gifts, another evening so they could go to the library, stayed up with Mason one whole night as he was running a temp and teething, so he slept in my arms on the couch (Grammie slept some too!), and then watched him last night so Antonio and Jenna could have a date night.  Plus lots of watching in between so Jenna could get a nap or get some cleaning done.  So to say the least, it was a busy week!

Here is a recipe I saw on Money Saving Mom's blog, and I made it tonight and it was very good.  I couldn't find my red pepper flakes so I omitted that.  If I make it again, I will make the whole bag of chicken breasts from Aldi's which has 12 in it as there is a lot of sauce with this recipe and I think it would work fine with 12 breasts.  The Sweet Baby Ray's BBQ sauce at Aldi's has 50% more free in it.  I am not sure if this is the correct amount of sauce to use, but that is what I used and it tasted delicious.  I also think this recipe would be good to make pulled chicken sandwiches with.  Just shred the chicken up and mix it into the sauce.  If you try this recipe out, let me know what you think of it.  A good thing to make in this heat!!!

Crock pot Barbecue Chicken

4-6 pieces boneless skinless chicken breasts (i threw them in frozen... even easier!)
1 bottle BBQ sauce (sweet baby ray's all the way!)
1/4 c vinegar
1 tsp. red pepper flakes
1/4 c brown sugar
1/2 - 1 tsp. garlic powder
Mix BBQ sauce with all ingredients listed under it. Place chicken in crockpot. Pour sauce over it and cook on LOW for 4-6 hours.

Aunt Helen's Cherry Dessert

The dessert I made for the Rag Bag class was a big hit and I promised Becky that I would put the recipe on the blog.  So....here you go kiddo!!!!

Aunt Helen's Cherry Dessert

Make a graham cracker crust and place it in the bottom of a 9" x 13" pan.  I used two cups (1 sleeve of graham crackers) crushed, 1/3 cup of sugar, and 1/2 cup of melted butter, mixed together and patted into the bottom of the pan.  I reserved some crumbs to put on the top of the dessert.

In a large bowl, mix 1 can of Cherry Pie filling, 1 can of sweetened condescend milk, 1 regular sized can of crushed pineapple (drained), and 12 oz of cool whip.  Spread the mixture over the top of the graham cracker crumbs, and then garnish the top of the dessert with reserved graham cracker crumbs.  Refrigerate.  Yummy!

Honey Mustard Dressing

Hello!  Today I thought I would share with you my latest favorite recipe.  When I was at the quilting retreat last month at Silver Birch Ranch, one of the gals there brought Honey Mustard Dressing that she made and we dipped pretzels in it.  Well, I am a HUGE Honey Mustard fan.  I love any sort of sandwich or salad with it on, and this tasted almost identical to the stuff that I buy in the grocery section above the lettuce.  And it is kind of pricey.  So I asked this gal if she would share the recipe with me and she said sure.  It makes a big batch and is oh so good.  I had some today on a Ham and Cheese sandwich I made with romaine lettuce.  I just spread it on the bread instead of mayo or butter.  Delish!  And I have used it as salad dressing two times on salads this week and it tastes just like the store bought brand.  The original recipe calls for Koops Honey Mustard.  I used Tates today, that I had bought at Aldi's and it is great too.  Enjoy!

2 Cups of Hellman's Mayo
1/2 cup of sugar
1/4 cup Koops Honey Mustard
1 tbsp garlic powder
red pepper flakes (I just sprinkled a little in it)

Chill for a few hours before using it.  I tried to use it right away and you can taste the sugar granules.  If it sits, the flavors and sugar all dissolves in the mayo and it tastes great!

Devil's Food Fudge Cookies

Need a quick treat for your next get together!?!?  I made these cookies for my card box class tonight and they absolutely loved them!

Devil's Food Fudge Cookies

1 package of Duncan Hines Devil's Food Cake Mix
2 eggs
1/2 cup of vegetable oil (I used canola oil)
1 cup semi sweet chocolate chips (I used peanut butter chips)
1/2 cup walnuts

Preheat oven to 350 degrees.  Grease baking sheets or use non stick baking sheets.

Combine all ingredients.  Mix till well blended, batter will be a little stiff.  Shape into 36 balls.  (I just dropped heaping teaspoon fulls.)  Bake for 10 to 11 minutes.  Cookies will look moist.  Do not overbake.  Cool 2 minutes on baking sheets, then on cooling racks if so desired, I just put them immediately in my tupperware container between layers of wax paper.  Makes about 3 dozen.

Notes:  For a delicious flavor treat, substitute peanut butter chips for the chocolate chips and chopped peanuts for the walnuts.  Enjoy!  Elaine

5 Minute Chocolate Cake for one person!




THE 5 MINUTE CHOCOLATE CAKE FOR ONE PERSON.......HOW NEAT













5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well..
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT ! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Wouldn't this make a neat gift for someone. Put the ingredients in a coffee mug. Wrap it in a cello bag, tie a ribbon around the top of the bag, and make a cute gift tag for it!

Cinnamon, Walnut, Oatmeal Mix

Good Morning! I am catching up on my email right now and one of the newsletters that I subscribe to is the Dollar Stretcher. I was reading a thread on making food gifts for Christmas. I am not a hot cereal fan but even this sounded good to me, lol and I thought that I would share this recipe with you this morning.

Cinnamon, Walnut Oatmeal Mix

1 - 7 oz package dried apples
1 - 18 oz. container quick-cooking oats
1 - 3 oz. jar non-dairy creamer
1/2 cup brown sugar; firmly-packed
1/2 cup walnuts; chopped
1 teaspoon salt
2 teaspoons ground cinnamon

Place dried apples in a processor; process until finely chopped. Add remaining ingredients and process until well blended. Store in airtight container. Give with serving instructions. .

Attach this to the jar:

Apple, Cinnamon, Walnut Oatmeal Mix

Stir 2/3 cup boiling water into 1/2 cup oatmeal mix until well
blended. Let stand until thickened.

3 Minute Chocolate Mug Cake

Hi, My friend in Florida sent me this and I immediately thought of you Elaine. I haven't tried it so don't know if it works or not. Hope you had a good day at the flea market! Corrine


3 MINUTE CHOCOLATE MUG CAKE...the most dangerous cake recipe in the world.

4 tablespoons cake flour or all purpose (plain, no self-rising)
4 tablespoons splenda
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips(optional) A small dash of vanilla flavoring
1 microwaveable coffee mug

Add dry ingredients to mug, and mix well Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips and vanilla flavoring...and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT! (this can serve 2 if you want to feel slightly more virtuous).

And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Cookie Dough Brownies

This recipe was posted on one of the stamping groups I belong to and I think it sounds heavenly!!!! I will have to try it out one of these days. I am sure it is something that my girls would like to as we all love eating cookie dough and cookie dough ice cream. When Jenna was in high school and was working at the local IGA, she was always bringing home cookie dough ice cream! Enjoy! Boo

Cookie Dough Brownies

2 cups sugar
1 1/2 cup flour
1/2 cup baking cocoa
1/2 teaspoon salt
1 cup oil
4 eggs
2 teaspoon vanilla

combine ingredients and beat a medium speed for 3 minutes. Stir in 1/2 cup nut if desired. Pour in a greased 9 X 13 inch pan. Bake at 350 degrees or until brownies test done. Cool completely... or you can also use your own favorite brownie mix .. cool completely

Filling:
1/2 cup soft butter (no margarine)
1/2 cup brown sugar
1/4 cup sugar
2 tablespoons milk
1 teaspoon vanilla
1 cup flour.

Beat sugar/butter together. Add vanilla and milk. Mix Well. Add flour..spread over cooled brownies. Chill until firm.

Glaze:
1 cup chocolate chips
1 tablespoon shortening

Melt together and spread over filling..sprinkle with 3/4 cup nuts if desired.

Your friends will either love you or hate you because these are amazing.
